Paula was the first Portuguese woman who let me live in her home. First mother, first teacher and story teller of a journey that has just begun.
Her favourite dish and a recipe that she easily knows by heart is of a dish called Bacalhau a Bras
“You can do it with codfish, mushrooms, soy beans or what ever you want… My family likes vegetarian version more, but in Portugal the one with codfish is more common”
And then she starts:
“You cut the onions in the half of moon, very slim. You put it in very hot olive oil, you add 2 cloves of garlic and wait for it to be soft”. Then we have to add the main ingredient - codfish that was already boiled in water.
“You leave it to fry a little and then add batatas fritas***, you mix again and put whisked eggs, cook 5-10 min more and it is done.
You can put some greens (parsley, coriander or spring onions) before serving it. Emmm, that’s it…”
*** batatas fritas - that is very popular thing in Portugal, you can find it in every shop, it is very thin slices of fried potatoes, crispy and golden, like chips.
