Eating healthy and delicious does not cost much

I have a new tasty challenge!!!

I went to a local market and had some fun in there. I spent only 10 EUR and I got the things that you can see in the photo: oats, sunflower seeds, pumpkin seeds, chillies, dried apricots and raisins, paprika, tomatoes, parsley, peas, zucchini, cucumber, spring onions, red onions, ginger root, mushrooms, sweet and regular potatoes, carrots (+few fish pieces that are not on the photo).
Since I really want to show to everyone that eating healthy and delicious is easy and cheap - I made 10 recipes from these products!

BREAKFAST:
Mega breakfast porridge//
Put our oats in a little pot and pour water till they are overlaid, wait for it to boil and put some raisins and chopped dried apricots. Boil for 2-3min, turn off the heat and wait for the water to be almost gone (now it is perfect time to add some coconut or regular butter). Garnish your porridge with roasted sunflower and pumpkin seeds + honey.
You will have loads of energy till your dinner, you will see:)
SALADS:
Amazingly low fat and madly passionate fried tomatoes salad//
Chop red onion, peas, sweet pepper, cucumber and place everything to a bowl. Slice tomatoes in quite thick pieces and put the in the hot pan (no oil) for 2 min for each side (or till they are nicely roasted). Put your fried tomatoes on top of the salads, drizzle them with lemon juice, pepper, salt and chopped parsley.
You will be surprised how tomatoes taste has changed after roasting them:)

Green salads//
Chop all the vegetables that you see in the picture: zucchini, peeled cucumber, red onion, parsley, spring onion and peas (if you have other green products, you can use them also, for example green paprika or salary). Add some lemon juice, salt, pepper and oil. It will be perfect as a snack or a side dish:)

Red salads//
Finely chop chilli, red onion and parsley. In bigger pieces slice red paprika and ripe tomato. Mix all the vegetables and herbs, add some oil, salt and pepper.
If it is dinner time and I eat plate like this - it’s more than enough to get me full, but if you need something more - grab a toast of bread or fry some meat instead!

Hot salads//
Finally chop red onion, half of chilli, spring onions, peas, zucchini and one big mushroom. Pre-heat the pan with drizzle of oil and firstly fry onions with chilli. After 2 min add mushroom and only then - the rest of the vegetables. Heat it for 1 more minute, add salt, pepper and go to eat:)
Perfect as a separate dish or as a side dish near meat

SOUPS:
Creamy potatoes soup with roasted mushrooms//
Peel parsnip and potatoes, chop them together with mushroom, parsley and onion. Pre-heat little pot with 1 spoon of oil, place onion in there and fry them for 2-3min. Add parsnip, potatoes and some water (just to overlay it, not too much), boil it till vegetables are soft. While soup is cooking, heat a pan with drizzle of oil and fry mushrooms on both sides, when they become brown - dry them on paper towel. Blend your soup with a blender and garnish it with mushrooms and parsley.
***I added pinch of salt only before eating:) even without it everything was going very well.

One more soup//
Finely chop all the vegetables that you see in the picture. Heat the pot with a spoon of oil and fry red onion, ginger and chilli for a few minutes. Then add potatoes, parsnip, paprika and zucchini. Cover all the vegetables with water and sprinkle with salt. Boil the soup till the potatoes and parsnips are soft. Blend it and garnish it with spring onions, parsley and roasted pumpkin seeds.

HOT DISHES:
Fish with vegetables//
Grey colours not necessarily means bland taste! Marinate your fish of choice with parsley, ginger, chilli, salt, paper and drizzle of oil. Then boil 2 sweet potatoes with 1 yellow carrot. Chop zucchini and red onion, fry them in hot pan with salt and pepper. Cook your fish in hot pan with teaspoon of olive oil and teaspoon of butter, squeeze some lemon juice and sprinkle some parsley on everything before serving.
The portion is big, so don’t hesitate to share.

Spicy vegetables jazz//
Boil your little potatoes. Chop chilli, zucchini, sweet pepper, onion, mushroom, parsley and spring onion. Heat the pan with a spoon of oil and firstly fry the chilli with onion. After they are golden put the mushrooms. After roasting them, add zucchini, paprika and half of the herbs. Heat it for 2-3min, add boiled and sliced potatoes, sprinkle with salt and pepper. Before garnishing put the rest of the herbs on top.
Be careful with chilli, I happened to chop in the dish ultra spicy one so after lunch I had to get some rest since not only my mouth but the whole body was on fire xD

Fried potatoes//
I decided to introduce you Lithuanian classics since I travel here in Portugal and I miss Lithuania’s village food so much:) (and yes, these were my leftovers from all the market shopping) xD
Finely chop red onion, regular and sweet potatoes, parsley. Heat the oven with two spoons of oil, firstly fry onions, then add potatoes. Spread them nicely in the pan, cover with lid and cook them for 7-9min at medium heat. Flip them all on the other side cover with lid again and cook for 7 more minutes. Add some salt and parsley before eating.

So here it is:) 10 recipes for 10 Euros !!! I hope I proved what I wanted to prove:)
