Shakshuka (eggs cooked with tomatoes)

Eggs are one of the most common products that I use in every days life and I am so happy that we have so many ways to prepare them!

Even though I work in a kitchen from when I was very little - I am yet not brave enough to tell you stories about omelette since it is considered that you are not a good chef if you do not know how to make an excellent omelette.
That is why I want to talk about a little bit easier dish, that is very common in Africa - Shakshuka (that is eggs cooked in tomatoes sauce)
You will need:

- half of onion
- 1 clove of garlic
- 1 little chilli (but spicy)
- small can of tomatoes
- 4 eggs
- small piece of feta or goat cheese
- fresh coriander or parsley
- salt and pepper
- 2-3 spoons of olive oil
*** this dish is for 2 people
Chop the onion, garlic, chilli. Wash the eggs and herbs

Heat the pan with olive oil and cook onion, chilli and garlic till they are soft

Pour smashed tomatoes and let it simmer for 5 min


Make 4 little holes in the tomatoes sauce and crack the eggs in it. Cover it with a lid and heat it with a low heat for 5min

Grate or crack little pieces of cheese on it, turn of the heat and let it stay for 5 more min (with the lid on)

Toast some bread, prepare a table, sprinkle some herbs and start to serve
