No Bake Sweet Potatoe Pie w/ Spirulina

Going to Graciosa island was one of the best ideas that I ever had!

Volunteering in Spirulina farm brought me thousands of benefits… I am talking about new friendships, new experiences, new recipes, fit body, clear mind, free thoughts and many other things. Still, I have to agree that Spirulina itself is one of those benefits:)

Also, traveling around the country and having no access to the OVEN made me think of a recipe that everyone could easily do without it! Actually, I dreamt of this pie, next day I made it - everyone who tried it - liked it, so I would say we have a green light for sure!

Here is what you will need:

- 3 medium size sweet potatoes

- 200g chocolate cookies

- 3 spoons of coconut oil

- 1 spoon of chia seeds (optional)

- 200g black chocolate

- 2 spoons of dried (or fresh) spirulina (optional)***

- dried fruits and nuts for decorating

*** If you do not like spirulina - you do not have to use it (nothing in this recipe would change if you choose not to use it)

Peel and chop potatoes into small cubes (so it would cook more faster), boil it

Put chocolate cookies to a plastic bag (or food processor) and crush it with a rolling pin (or with a jar, wine bottle, what ever you have:))

Melt coconut butter

Prepare a round tray with a baking paper, mix chia seeds, cookies and coconut oil straight there

Push it to the corners so it would be firm

Melt chocolate over a steam bath or in the microwave

Place boiled sweet potatoes to a food processor and blend it together with spirulina and melted chocolate

Pour the filling on the cookies

Leave it like this or put some fruits on top, let it sit in the fridge over night

Aaaand we are done! Share it with your friends and if something is left - keep it in the fridge!
