Here I am in this village, somewhere near Reliquias city which is so small that not every Portuguese knows it… I am so far away from all the “black fridays”, “thanksgiving” and other strange celebrations and words that I can’t even understand// and I am more than glad to be far away from it!

Other advantage of being a woof'er: Yesterday I had a chance to be in a small community gathering where people who live nearby met with each other, ate, laughed, played and talked.
All the tables were full of Portuguese dishes made by the locals and everyone could have a taste.
This is exactly what I like about being here - the love for food and a huge appreciation that every single person shows.
Unfortunately, today is my last day at Monte do Cavão farm so me and 3 French girls decided to try this beautiful hand made oven and bake some pizzas!

I want to share my pizza dough recipe that I was improving for a couple of years. Believe me, my first attempt to do homemade pizza was a true disaster:)
Nevertheless, here it is (in photos you will see a huge amount of flour but if you are making only for 2 people here is what you need):
- 300g flour
- 7g dry yeast
- pinch of salt
- 120-150ml warm water
- 50ml good olive oil
* it is possible that you’ll need more water! If you see, that dough is not holding up together - add it. But be patient and don’t add to much at a first time also//
1) Mix flour, salt and yeast
2) Put a little hole in the middle and pour water with olive oil
3) Start mixing with a spoon and when it gets to messy - take the dough on the clean table with a little sprinkle of flour
4) Now - embrace yourself and start kneading. Do it with both of your palms (as shown in photos) not with your fingers
5) Do it for 5min or till dough is not sticking to your table (if needed, add flour)

6) Divide pizza dough into smaller parts, make beautiful little balls and put them into a bowl or a tray and leave it for at least 1 hour.

7) After that it should double in size

8) Now lets begin rolling. You can do it in any shape that you want but I prefer classics//

9) Get crazy with all the toppings, don’t be lazy and chop some leeks, zucchini, peppers, tomatoes, onions or garlic. Take some tuna, anchovies, ham, mocarella and set it all on your dough together with tomato sauce.
*don’t put too much because it won’t cook in the middle

10) If you don’t have a handmade wooden oven - that’s not a problem. Bake your pizza in 180C oven for 30min. Watch it, be patient and you will be more than satisfied after trying it!
That is how I looked when I got to try it. Tears in my eyes… That was just awesome:)

Cheers for those who like to cook, cheers for pizza, cheers for oven and cheers for Monte Do Cavão,
Tomorrow - new farm, new adventures,
Tchau!
